Mushroom & Spinach Risotto
Risotto is notoriously difficult to make well. I'm not sure I did that great, but anyhow, I gave it a go. The full recipe and ingredients were taken from the Taste website (there's a link in the video description).
I had all the ingredients I needed at home, with the exception of the wine. We don't drink and never have it around, so I tried to substitute it with lemon juice for a little acidity. I'm not sure how much of a difference it made.
Some chefs recommend that the risotto doesn't get stirred, but gets agitated instead. I also recommend that you eat the risotto immediately so that it doesn't get cold and clumpy. Mixed opinions from the family about this one.
